The extraordinary story of the hamburger

The simple basic concept - a beef patty sandwiched between two buns - was enough to steal the burger into the hearts (and stomachs) of millions. The emblematic fast-food snack quickly conquered the planet, and beyond the classic version, countless variations have spread beyond the fast-food world in the form of artisanal burgers. Today, everyone can find recipes and seasonings to suit their tastes and discover the best burger spots on gastronomic tours.

But what path has this popular food taken? Where did it start and how did it become a favourite? You're unlikely to think about it while you're eating, but you can unravel some interesting stories from the mists of gastronomic history.

The birth of the hamburger

There are also many conflicting stories about where and how the first burger was made, and who is credited with creating it. Of course, there is also the question of how much we understand the origin story. The origins of the meat patty, for example, can be traced back to Roman times, including the conquests of the Tatars (Tatar bifsts), who, according to legend, tenderised the meat under their saddles, while if you want to know the origins of the hamburger in the strict sense, you have to look to the 18th and 19th centuries.

Traces of the ancestor of today's hamburger have been found in Hamburg, Germany, and the oldest known source recipe is found in the pages of an 18th century cookbook. Hamburg, as the most important port city, played a key role in the emergence and spread of the Hamburg Steak. Originally sold in the harbour, the fast food was introduced to America by German emigrants, and in the 19th century, Hamburg-style steak became increasingly popular in the port of New York.

However, Texas has also claimed the title of „the birthplace of the hamburger”, with Fletcher Davis„ story backing up the theory. According to the story, the man known only as ”Uncle Fletcher" made the world's first hamburger sandwich in a small café in Texas in the late 1880s, and it was debuted as a hamburger at the 1904 World's Fair in St Louis.

But the competition doesn't end there: two plausible stories link the origin of burgers to fairs. According to one, „Hamburger” Charlie, better known as Charlie Nagreen, started selling his meatballs between slices of bread at fairs in Seymour, which he eventually flattened. Another story is about the Menches brothers, who sold their sausage sandwiches at a fair in Hamburg, New York. Then they ran out of pork and swapped it for beef, naming the result Hamburgers after the town.

Whichever story you believe, they all prove that, like most inventions, the hamburger is a response to a human need for affordable, quick (and standing) access to nutritious food for large masses of people.
